To Boldly Go 2022 (Cherry) Sparkling Fruit Cider

Our attempt to make fine Lambrusco from Herefordshire fruit but without grapes! This combines a carbonic maceration of sour cherries, later pressed with fresh Discovery apples and wild fermented. Mid-season perry pear juice was added to the blend and it was bottled as a pet-nat and subsequently disgorged by hand. The result is a ruby coloured, foamy, perfumed drink full of red fruits, almond, creamy pears, bubblegum and soft tannins. It’s not Lambrusco of course but it has that vibe and goes super well with charcuterie which was the who point of the mission!
